Finally! I’ve finally made the cookie dough pops that I’ve been wanting to make for ages now. I found the recipe and inspiration on Baked Perfection which I found via Pinterest.
Here is the recipe (makes 20):
- 1 cup of plain flour
- Dash of cinnamon
- 125g slightly salted butter
- 1/2 cup of brown sugar
- 1/4 cup of white sugar
- 1/2 tsp vanilla extract
- Chocolate chips – I didn’t measure these, I just chucked them in
- Strawberry flavoured chocolate buttons for melting
- 1/2 a big bar of milk chocolate
- 1/2 a big bar of dark cooking chocolate
Chuck the flour and cinnamon in a bowl and mix together. In another bowl, chuck in the butter [softened], sugar, brown sugar and vanilla extract and beat until creamy. Slowly add the flour/cinnamon mixture until smooth and cookie-dough-esque. Stir in the chocolate chips.
Roll into balls. I used a melon baller to make sure they were all roughly the same size. Lay these on a sheet of baking paper. Insert lolly stick. Don’t push it all the way through – if you do, they will just fall off. I learnt this the hard way.
I then stuck mine in the freezer for 15, the website I got this from says you can chill for several hours otherwise. They need to be firm for dipping.
Melt your dark and milk chocolate (this is my own addition – I prefer them mixed than either one of them on their own) however you like. I microwaved mine and then kept it liquid in a bowl over some boiling water. Dip your balls into the chocolate.
You can then stick them in a styrofoam block to dry. I didn’t do this so I’ve got a slightly flat bottom (or top) on mine. There was a lot of trial and error, I can assure you!!!
I then froze mine again for 5 minutes and then dipped in the melted strawberry chocolate and then covered in sprinkles. I then just put them in the conservatory to chill and then put them in the bags to make them look all pretty.
