I know, I know, I said in my last post that this isn’t a foodie blog and it’s not, but I’ve been trying to try new recipes lately and here are some that have gone well…
Pan-fried chicken in mushroom sauce from BBC good food.
I used vegetable stock instead of chicken stock (Knorr stock pot), I used single cream instead of double cream and I didn’t use butter… oh and I had to use dried wild mushrooms that I soaked in hot water. It was delicious and I’ll be making it again. Be sure to season it well, but do take into account the salt in your stock.
This recipe was absolutely delicious – it was also my first time cooking duck so I was quite nervous that I was going to ruin it, but it’s actually quite simple to do when following this recipe.
What did I change? Ummm…I didn’t season with Chinese 5 spice because all I had at the time was Thai 7 spice, but it was tasty anyway. The rest was pretty spot on. My mango was really, really ripe which went so well with the duck, so I recommend using a ripe one.

Another winner, but next time I’ll be a little braver and use more mustard.
